My Mom makes the best apple pie I have ever had. I practically grew up on it. In fact - you know how most kids have a birthday cake on their special day? Well, I don't recall ever having a birthday cake. My brothers and I always asked
for our favorite pie on our birthdays.
So in honor of our fall time favorite, I made apple pie today. But I wanted to try something a little different so I tried this with my Mom's recipe. I know pie in a jar sounds cheesy but it is so yummy! There is something about eating it out of the jar that makes it taste so good. I seriously can't get enough of these little guys (with a side of vanilla ice cream).
I think I'll make these for my birthday this year.

My Mom's Awesome (full-sized) Apple Pie
Filling
6-8 apples, peeled & sliced
1 c. water
1/2 lemon squeezed (2 T.)
Cook until tender
(I like my apples a little on the crunchy side and not all mushy)
Add:
1/2 c. brown sugar
1/4 c. white sugar
2 T. cornstarch
1 t. cinnamon
Cook until thickened
Let cool while you make the crust.
Crust
2 c. flour
1 c. Crisco
1 t. salt
ice cold water as needed (1/4-1/3 c.)
Blend flour, Crisco and salt with a pastry blender. Slowly add cold water stirring until dough forms a ball. Roll out on flour covered pastry board.
Place pie filling in crust and dot with butter. Wet crust edge with water or milk and place crust on top, sealing edges. Cut air vents. Wet top crust with milk and sprinkle with sugar. Bake at 350 for 1 hour or until golden brown and filling is bubbly.
I've found that I can get about 8 jar-sized pies out of one filling recipe and 1 1/2 crust recipes.

What a great idea! Yay for sharing the recipe. I will be making these shortly. I am excited, any recipe from your mom is good. I still use the snicker doodle recipe all the time!
